Lemon Curd

Beautifully tart, this spread is the perfect addition to scones and adds a brightness when drinking brown tea.
  • 3 Eggs
  • 1 cup Sugar
  • 1/2 Cup Fresh Lemon Juice
  • 1/4 Cup Melted Butter or Margarine
  • 1 tsp Grated Lemon Peel

In double boiler, beat eggs and sugar.
Stir in rest of ingredients.
Cook over simmering water until thickened.
