Pizza! Two ways.

This last week we made Pizza two different ways.

Avocado & Egg:
 We picked up a package of pre-made whole wheat pizza dough from fresh and easy, rolled it out, brushed it with olive oil, covered it in mozzarella and Avocado and then cracked four eggs on top.

It was DELISH!

Greek Pizza:
A previous trip to Vegas, we got a Greek pizza at this little cafe. It was AMAZING, and so, we decided to go back and get it again this last time we were up there. And of course, they no longe offered that pizza! So we decided to make it ourselves.

For a crust, we used Lavosh bread, covered in home made Tzatziki then a layer of gyro meat. On top of that a healthy dose of pepperoncinis and cubes of mozzarella and crumbled feta. (Earl put red pepper flakes on top of his)

I absolutely love this pizza, whether home made or from a Vegas cafe.

German Pancakes

Preheat Oven: 425 degrees



Heat cast iron frying pan in oven with tablespoon of butter (or spray liberally). Mix ingredients according to pan size and pour into heated pan.

Bake for 15 minutes.

Day Before Payday Fried Rice

  • 3 Tbsp Veg Oil, divided
  • 3 Eggs, beaten
  • 3 cups Brown Rice, cooked and cooled
  • 2 cups Frozen vegetables (I usually use peas and carrots)
  • 3 tbsp Soy Sauce

Heat 1 tbsp oil in large skillet over medium and scramble until firm. Set aside.

Put remaining oil in skillet coat all rice on high, stir in vegetables and reduce heat to medium. Cover and steam for 5 minutes.

Stir in eggs and soy sauce. Cook until eggs are heated through.

Zucchini Tots


Preheat Oven: 400 degrees

Ingredients:

  • 1 cup Zucchini, grated
  • 1 Egg
  • 1/4 Yellow Onion, diced
  • 1/4 cup Cheese (Cheddar or Parmesan)
  • 1/4 cup Bread Crumbs
  • Salt and Pepper

Directions:

Grate zucchini and place in dish towel to squeeze out excess water (if you skip this you'll have soggy tots.)

In a bole combine all ingredients, then fill greased muffin cups to the top.

Bake for 15-18 minutes.

Meatloaf

Preheat Oven: 375 degrees

Loaf:
  • 1 lb Ground Beef
  • ½ lb Baby Carrots
  • 1 medium Yellow Onion
  • 4 cloves Garlic
  • 1 Egg
  • 1 cup uncooked instant Brown Rice
  • 2 tbsp Worcestershire Sauce
  • 2 tbsp Ketchup
  • Salt and pepper to taste

To Top:
  • 2 tbsp Ketchup
  • ¼ cup Cheddar Cheese

In food processor, puree carrots, onion and garlic together.

In a bowl, combine beef, pureed veggies, and remaining loaf ingredients until well mixed.

Press into greased loaf pan, spread ketchup over top and sprinkle with cheddar. Cook uncovered for 40-45 minutes.

Key Lime Pie

Preheat Oven: 350 degrees

  • 1 Graham Cracker Crust
  • Whipped Cream
  • 6 Egg Yokes
  • 1 can (14oz) Condensed Milk
  • 1/2 cup fresh Lime Juice

In medium bowl, combine last 3 ingredients. Pour into crust.

Bake 15 minutes.

Cool to room temperature. Place in refrigerator until ready to serve.

Serve each slice with Whipped Cream.
