Clam Chowda

My mum flew into town yesterday, so this post is just a recipe. I'll be back to my long windedness after she leaves :)


(I don't have a picture of this, because homemade clam chowder doesn't keep that long)

Ingredients:

2 6oz cans minced clams
2 slices bacon (cut up)
4 medium potatoes (peeled and diced)
1/2 cup chopped onion
2 1/2 cups Milk
1 cup light cream
3 tablespoons all purpose flour
1/2 teaspoon Worcestershire sauce

Directions:

Drain clam, reserving the liquid. Add enough water to reserved liquid to measure 2 cups liquid; set aside.

In a large sauce pan, fry bacon till crisp; remove and set aside.

Add reserved liquid, potatoes, and onion to fat in saucepan. Cook covered for about 15 minutes (or until the potatoes are tender. 

Stir in clams, 2 cups of the milk, and the light cream. 

In a separate bowl, stir the 1/2 cup remaining milk into flour. Stir mixture into chowder.

Cook, stirring constantly, until bubbly. Add Worcestershire, 3/4 teaspoon salt, and a dash of pepper. Sprinkle bacon on top. Serve.
